    “One of the characteristics of coconut oil is its high melting point. At temperatures above 76 degrees F (24 C) coconut oil is a liquid. At temperatures below this it becomes a solid. The oil will be either liquid or solid depending on the temperature of the room.”
    It has puzzled me that, in the same store (and temperature), there is ‘coconut fat’ (solid) and ‘coconut oil’ (liquid) for sale at very different prices.
    I want to say that the solid product, labeled as ‘coconut oil’ is not the same product that took a village to produce back in Leguan.
    2 or 3 men would be at the bars (no alcohol served) separating the shell while we (little) guys would watch in fascination – and wait for an opportunity! How we did not disembowel ourselves was due to solely to Divine Intervention. The men would then crack the shell (22″ ‘Nylon’ cutlass) into two halves and we would be treated to what little coconut water had remained in the nut. (Talk about ‘hanging yuh mouth’!). A team of women would sit – strategically – around the pile of ‘coconut hemispheres’ with kitchen knife, grater and ‘wash-han’ basin. They would tuck their skirt hem up above their knees (affording us, boys, a look at uncharted territory) and proceed to grate the ‘meat’ out of the nut-hemispheres. We would now be treated to ‘cush-cush’ and sugar, the next best thing to ‘grate sugar-cake’ – a truly great treat in the school grounds.
    The ‘cush-cush’ would be successively soaked in water and squeezed dry; the strained liquid would be collected in enamel buckets and left out, covered, in the open, overnight. Next day, in the afternoon, the ‘cream’ would be skimmed off and boiled to yield coconut oil …. and chanchee! With sugar!
    But here is my point; coconut oil never solidified. Did the temperature never drop low enough? I doubt it.
    I found out that commercially, coconut oil is produced by drying and pressing the freshly grated ‘cush-cush’ – no ‘washing’ process. Is this why the finished product remains solid at temperatures above 76?
    My curiosity is a by product of my skepticism – about products labeled green, natural, organic etc. etc. I tell my wife to avoid the solid product labeled ‘coconut oil’ because it probably contains products that did not get ‘washed out’ of the ‘cush-cush’ stage.
    I am interested in your opinion.
